3.1 Cleaning And Grading

In the cleaning process, not only the impurities such as big impurity, light impurity and side impurity should be removed, but also the heavy rice and light rice should be separated preliminarily.

After the preliminary grading of rice, grading equipment should also be set up. Use the thickness grader to grade, and use the difference of raw materials in granularity to remove the worm eaten grain, diseased grain, damaged grain, hulled or semi hulled grain and overlong and thick grain in the original grain, so as to ensure that the grain entering the soaking process is consistent in granularity.

  

3.2 Soaking And Cooking

The soaking process is to send the cleaned and graded rice into the pressure tank. The upper part of the pressure tank is equipped with an air valve to ensure that when the paddy enters, the valve is closed, and the lower part of the pressure tank is equipped with a rotary discharge valve to ensure that the pressure inside the tank is constant during the discharge process. When the rice enters the pressure vessel, it is injected with hot water at a certain temperature and pressurized.

During the soaking process, we use the hot water circulation system to ensure that the water temperature of each point in the container is the same;

Cooking process: the rice with water content of about 35% is sent into the digester by vibration conveying equipment, sealed container, and then filled with 120 ºC saturated steam to make the starch in the endosperm part of rice gelatinize rapidly.

  

3.3 Drying

The drying process adopts two-stage process design, i.e. fast drying, tempering and then slow drying. In the process of fast drying, the moisture content of rice decreased rapidly to about 18%. The preliminary dried rice is then passed through a continuous tower dryer. The hot air temperature of the tower dryer is about 75 ºC. Through the slow batch tower drying, the moisture content of the rice is gradually reduced to prevent the different diffusion rate of the internal and external moisture, which causes the rice to burst. Finally, the moisture content of rice was about 14%;

 

3.4 Tempering

The dried rice is easy to absorb moisture, return to moisture and produce cracks when contacting with air, and it is easy to produce broken rice in the process of rice milling. Therefore, after the rice is dried, it will be placed in the silo with axial fan ventilation system for a period of time, to gradually ease the internal stress of the rice and make its stress uniform. The time to slow down the Soviet Union is generally 5-7 days according to the difference of the original grain.

 

3.5 Hulling And Milling

After rice is boiled and dried, the combining ability of rice husk and rice husk is greatly reduced, which is easy to be shelled, and the shelling rate of rice huller is more than 90%; however, the combination of bran layer and endosperm is more closely, the grains are hard, rice bran is easy to rub out oil, which makes rice grains slip, block the sieve holes, and is not easy to be milled. The vertical sand roller rice machine of air spraying type shall be selected, and the rotation speed of the roller of the vertical rice machine shall be adjusted to increase the pressure of the white grinding chamber.

Through the polishing treatment, not only the floating surface of the rice grain can be cleared, but also the starch is pregelatinized and gelatinized on the surface of the rice starch, and the starch gelatinization makes up for cracks, thereby obtaining the smooth appearance, improving the storage life of the rice, therefore polished rice is very necessary.
